THIERRY LERICHE – Catering Manager

Thierry has worked in various restaurants in France for 10 years before migrating to Australia in 1985 where he worked for around 2 years at University House. He then moved to the Capital Parkroyal where he stayed for 6½ years with a stint as Executive Sous Chef at the Manly Pacific Hotel for 18 months. Thierry returned to Canberra to open the Griffin Hotel Restaurant “Miro” for 18 months before starting at John XXIII College in 1998 – has never looked back since then with multiple improvements to the venue and its operations.
Reporting to the Operations Manager, the Catering Manager is responsible for the overall catering supervision and administration of the kitchen. The Catering Manager leads the team of Catering and communicates daily with the Operations Manager, and the Events Officer as required, to ensure effective outcomes.
Mai joined the College in May 2003 bringing with her a variety of cooking talents and flairs.
Reporting to the Catering Manager, the Sous Chef oversees the smooth operation of the kitchen in relation to ordering and receipting goods, supplies and monitoring the cost-effective provision of catering services in the College.
WINSTON SLATER – Chef de Partie
With nearly 12 years of experience in the catering sector, Winston’s expertise range from a la carte fine dining to commercial catering. In addition to putting his own twist on every meal he cooks to make it his own, Winston enjoys being active in supporting the John XXIII College sporting events. Winston has been with the College since 2008.
ANTHONY PAUL – Chef de Partie
In October 2010, Anthony joined the College as Chef. Anthony produces a variety of meals for the Residents at the College but be prepared for a spicy one if it has been cooked by Anthony!
Reporting to the Catering Manager, the Chefs assist with the smooth operation of the kitchen in relation to ordering and receipting goods and supplies plus monitoring the cost-effective provisions of catering services in the College.
SANDI LERICHE – Dining Hall Supervisor
With love and passion for her role as Dining Hall Supervisor, Sandi has been with the College since 2002. With a smile on her face, you will find her working part time in the Dining Room throughout the week. Sandi has been a team member since 2002.
Reporting to the Catering Manager the Dining Hall Supervisor assists with the smooth operation of the dining hall and the coordination of all dining room attendants in serving, cleaning and servicing for the benefit of College customers.

Reporting to the Catering Manager the Catering Assistants provide general assistance to employees of higher level involving cleaning duties, salads and vegetables preparation and dishing of food at the servery.
