With over 35 years of experience in Hospitality, Trad has been providing the College and Residents with his expertise since 2006.
Reporting to the Head of College, the Operations Manager supports, supervises and coordinates the Catering Team and the Building Services Team, which provide essential services to staff and students in all areas of the College.
ANDREW SIMPSON – Catering Manager
Trade Certificate in Commercial Cooking
Andrew joined the College in 2019 after 33 years experience in the trade. He has been the Head Chef and Executive Chef in Hotels around Australia and overseas.
Reporting to the Operations Manager, the Catering Manager is responsible for the overall supervision and administration of the kitchen and the catering team.
Mai joined the College in May 2003 bringing with her a variety of cooking talents and flairs.
Reporting to the Catering Manager, the Sous Chef oversees the smooth operation of the kitchen in relation to ordering and receipting goods, supplies and monitoring the cost-effective provision of catering services in the College.
WINSTON SLATER – Chef de Partie
With nearly 12 years of experience in the catering sector, Winston’s expertise range from a la carte fine dining to commercial catering. In addition to putting his own twist on every meal he cooks to make it his own, Winston enjoys being active in supporting the John XXIII College sporting events. Winston has been with the College since 2008.
FAYE OO – Chef de Partie
Faye joined the College as Chef de Partie in January 2018. Faye brings nearly 15 years experience in providing amazing food for large groups. Now you can enjoy her meals here at the College!
Reporting to the Catering Manager, the Chefs assist with the smooth operation of the kitchen in relation to ordering and receipting goods and supplies plus monitoring the cost-effective provisions of catering services in the College.
SANDI LERICHE – Dining Hall Supervisor
With love and passion for her role as Dining Hall Supervisor, Sandi has been with the College since 2002. With a smile on her face, you will find her working part time in the Dining Room throughout the week. Sandi has been a team member since 2002.
Reporting to the Catering Manager the Dining Hall Supervisor assists with the smooth operation of the dining hall and the coordination of all dining room attendants in serving, cleaning and servicing for the benefit of College customers.
John XXIII College Catering Assistants
SOUCHITTA VIRAVONG , DIEN MA, MIN SHWE & EUNYOUNG NAM
Reporting to the Catering Manager the Catering Assistants provide general assistance to employees of higher level involving cleaning duties, salads and vegetables preparation and dishing of food at the servery.
THE MAINTENANCE SUPERVISORS
The College has two staff in this role and they are both responsible for the maintenance of the infrastructure and facilities throughout the College. They ensure that those areas requiring repairs or improvements are attended to promptly, as well as maintaining the clean and tidy external appearance of the College.
JAMIE PARNABY – Maintenance Supervisor

Jamie has over 20 years of experience in mechanical services ranging from plumbing, A/C systems, electrical works and network cabling he joined the College in 2009.
BRENT WOODWARD – Maintenance Supervisor
Brent joined the College in 2018 after 10 years as a roof plumber and more recently doing maintenance at a large retail shopping mall
Reporting to the Operations Manager, the Maintenance Supervisor ensures that those areas requiring repairs or improvements are attended to promptly, as well as maintaining the clean and tidy external appearance of the College.
